Meet Nick Wilson ~

I go by many names, Nick, Nickevan, Evan, and, more notoriously, Emoney. But you can always just call me a friend whenever you want!

I was born and raised in the vibrant and sunny town of Garland, Texas, so long ago that the year started with a 19 and not a 20. These days, my wife and I happily raise our 3 lovely girls, Aria (who is now a sassy 12-year-old), Kyla (a playful 3-year-old), and our adorable little Sloane (just 18 months old), all while living in the beautiful city of Albuquerque, NM. And let’s not forget about our family of furry pals; we have 3 amazing dogs who keep our lives full of joy and laughter! Colby, Zia, & Zeus.

Growing up, I didn’t have a dad with a great homemade beef jerky recipe to share with me and create precious memories. Instead, what I did have was a best friend whose dad would whip up the most bomb jerky this side of Dallas that left us all craving more. I was fortunate that every time Adam’s family would go out of town, his dad would make me my very own little handful of that mouth-watering treat.

Living in Texas, it seems almost impossible to grow up without developing a deep love for delicious meat! Now that I’m a father myself, with a passion for grilling and barbecuing, not to mention taking epic road trips multiple times a year, it felt only natural that I began dabbling in the art of making beef jerky.

With some fine-tuning of a variety of online recipes and a bit of creative dilly-dallying in my own unique flavors, I’ve ultimately mastered some fantastic jerky recipes that I’m proud of. After some gentle coaxing from friends and family and with the support of Adam’s sizzling “I’m doing this and I’m doing this now” attitude—not to mention the influence of his own kick-ass jerky recipes—we’ve decided to team up to share our incredible jerky with the world!

And, of course, never forget the golden rule in this meat-filled adventure: safety first!
